Lime Avocado Bars

Yield 8x8 square pan / 16 2x2 servings


30g coconut oil

30g maple syrup

1/4 t vanilla extract

155g blanched almond meal


210 avocado

140g lime juice

60g lemon juice

200g coconut milk

25g maple syrup

8g arrowroot starch


Preheat oven 350ºF and line a 8x8 pan with parchment


Place the almond meal in a medium bowl and make a well in the center

Melt coconut oil and maple syrup together, do not boil


Add coconut oil mixture and vanilla into the well

Mix together with a fork or rubber spatula until mixture comes together, it will be slightly crumbly

Press dough into the lined pan evenly

Bake at 350ºF for 10 minutes rotate and bake another 5-7 minutes, edges should be golden.


Drop oven to 300ºF

In a blender puree all ingredients together except maple syrup.

Add maple syrup to taste, mix to combine

Pour the filling into the pan and tap on the counter to level the filling

Bake at 300ºF for 20-25 minutes edges will darken slightly and the filling will be set

Allow to cool in the fridge for at least 4 hours before cutting.
