Gluten Free Vegan Banana Bread

Banana Bread

Yield 1 loaf (9x5x3)


340g banana, mashed

3g vanilla extract

7g flax meal

30g water

45g sunflower oil

105g sugar

60g maple syrup

180g vegan yogurt

3⁄4t salt

12g baking powder

145g almond meal

115g oats

120g sorghum flour

25g white rice flour

40g arrowroot starch

150g walnuts, or pecans, or chocolate chips or a mix of

In a small bowl combine flax meal and water together, let sit for 5 minutes.

In a large bowl combine the sunflower oil, sugar, syrup, and yogurt, and flax mixture.

Add bananas and vanilla into wet mixture, fold to combine.

In a separate bowl sift together salt, baking powder, sorghum flour, white rice flour, and arrowroot starch. Add oats and almond flour to sifted ingredients and whisk to combine

Remove 1-2 tablespoons of the dry ingredients, add to walnuts and toss together, set aside.  

Add the dry ingredients to the wet mixture, mix until mostly combined. Add walnuts and finish mixing

Place batter into a lined and greased loaf pan, smooth top and garnish as you like.  

Bake at 350°F for 30-45 minutes.

If top is browning too quickly place foil on top
